Lunchbox Notes

This week we are celebrating Sunday Lunchbox’s 6 month anniversary of our first lunchbox delivery.  We’re so happy you’re part of the program!  

We’re starting to prepare for our first T’uffins 4 Teaching workshop.  You’ll receive a survey this week about participating in this cooking-class/nutrition workshop for you and your children.  We’re also looking for one of our families who wants to help us lead the demonstration.  Please reach out if you are!

This week you have 2 nut-free options for T’uffins: Jade and Lem’n Beri.

What to do with wrappers?

  • T’uffin and Hak Paks : Compost or return to us
  • Snacks : return to us

Some reminders :

  • Submit weekly preferences at sundaylunchbox.com/weekly, or in Spanish at sundaylunchbox.com/semanal.  This is now mandatory to participate in the program
  • Please save the bags.  Leave on your porch next week for us to pick up.  We’ll come by Sunday morning, same time, same place.

Zucchini/Apple Salad

Ingredients
  • Apple
  • ½ zucchini
  • Italian salad dressing (or your favorite)
  • (optional) chopped nuts (any time, but pecans are our favorite!)
Instructions

Step 1

Chop zucchini and apples into small pieces.

Step 2

Put apples and zucchini pieces into a large bowl.  Toss with salad dressing and nuts.

Step 3

Serve and enjoy!

Your snacks got an upgrade this week!  We are happy to have found additional healthy options to keep in stock and hope your kids enjoy them as well.  We’ll include a special section in our feedback form this week so you can let us know.

Please return all snack wrappers to us next week rather than throwing in the trash, as we have a special recycling program!

If you haven’t checked it out in awhile, we’ve done some major upgrades to our website. You can check out all our T’uffin flavors at sundaylunchbox.com/tuffins.  We do our best to offer variety week to week, but only use local produce.  Sometimes we are able to freeze produce and have off-season flavors, but for the most part T’uffins will cycle with the seasons (sundaylunchbox.com/tuffinseasons.)

Ingredients
  • Bananas
  • Apples
  • Pears
Instructions

Step 1

Chop bananas, apples, and pears into small bite-sized pieces.

Step 2

Add all to a large bowl, stir and enjoy!

Happy Sunday!  You probably noticed your delivery came later today; we are excited to be transitioning into a shared commercial kitchen with a local bakery, and as such are taking the afternoon cooking shift.  This means your T’uffins are fresher than ever when they get to you.

You’ll find a lettuce plant in your produce bag today.  Plant it for continued fresh growth, or eat immediately while it’s still fresh.

  • Tell your friends and family about us if you believe they’d benefit from our services.  You can make a referral at sundaylunchbox.com/referral.
  • Please save the bags.  Leave on your porch next week for us to pick up.  We’ll come by Sunday morning, same time, same place.

Arugula Salad

Ingredients
  • Fresh arugula
  • Apples
  • Pears
  • Salad dressing of choice
Instructions

Step 1

Chop apples and pears into small pieces.

Step 2

Toss arugula with fruit in dressing of choice.

Try Maple Vinaigrette (red wine vinegar, maple syrup, olive oil, salt and pepper.)

Step 3

Enjoy immediately!
